Kids Love It Eggplant - cooking recipe

Ingredients
    cooking oil
    2 beaten eggs
    2 tsp. olive or cooking oil
    1 medium eggplant, peeled and sliced 1/4-inch thick
    1 1/3 c. cheese and herb seasoned crumbs
    shredded Mozzarella or Monterey Jack cheese
Preparation
    Brush unheated broiler pan with oil.
    Beat together eggs and 2 teaspoons oil.
    Dip eggplant in egg mixture; coat with crumbs. Place on greased pan.
    Broil 4 inches from heat 2 minutes or until golden; turn.
    Broil 1 to 2 minutes more.
    Sprinkle cheese on top. Broil 1 minute more until cheese melts.
    Serves 8.
