Ham And Corn Fritters - cooking recipe

Ingredients
    1/2 c. diced ham
    1 scallion, chopped
    4 Tbsp. butter
    1/2 c. water
    1/2 c. flour
    2 eggs
    1/2 c. corn kernels
    1/4 tsp. dried sage
    oil
    salt and pepper to taste
Preparation
    Cut butter into 4 chunks.
    Bring butter, water, 1/4 teaspoon salt and 1/8 teaspoon pepper to a boil in a saucepan and boil until butter melts.
    Remove from heat and stir in flour all at once.
    Stir over low heat until smooth and comes away from sides of pan in a ball.
    While hot, put in mixing bowl and beat in eggs, one at a time.
    Stir in ham, scallion, corn and sage.
    Drop by heaping tablespoon into fat and fry until golden, about 3 to 5 minutes.
    Drain on paper towel.
