Pumpkin Spice Muffins - cooking recipe
Ingredients

1 c. fresh or canned pumpkin
2/3 c. raisins
1/2 c. hot water
2 eggs
1 c. sugar
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1/4 tsp. cloves
2 c. flour
1 Tbsp. baking powder
1 tsp. baking soda
1/2 c. vegetable oil
Preparation

Grease muffin tin for 12 muffins.
Soak raisins in hot water for 15 minutes.
In a large bowl, beat eggs with sugar, salt and spices.
Gradually beat in pumpkin.
Sift flour with baking powder and soda; gradually add to batter.
Beat in the oil and raisins with liquid.
Preheat oven to 400\u00b0.
Ladle batter into tins, filling 2/3 full.
Bake muffins for 20 to 30 minutes or until puffed and firm when tested.
Serve warm with butter.
