Wild Rice Waldorf Salad - cooking recipe

Ingredients
    1/2 c. uncooked wild rice (about 2 c. cooked)
    4 medium apples (unpared), diced
    juice of 1 lemon
    2 Tbsp. brown sugar
    3 ribs celery, sliced
    1/2 c. chopped walnuts
    1/2 c. raisins (optional)
    1 (8 oz.) carton low-fat apple or vanilla yogurt
    1/2 tsp. cinnamon
    1/4 tsp. coriander
    dash of nutmeg
Preparation
    Wash rice thoroughly; place in heavy saucepan with 3 1/3 cups of water.
    Bring to a boil, reduce heat and cover.
    Simmer 45 to 60 minutes or until rice has puffed and most of liquid is absorbed.
    Chill cooked rice.
