Ingredients

16 to 20 dried ladyfingers, toasted, if necessary
3 large eggs, separated
1/2 c. sugar
1 Tbsp. Espresso or strong coffee
2 Tbsp. cognac (brandy)
8 oz. Mascarpone or cream cheese
1/8 c. cocoa
Preparation

Step One:
Prepare Mascarpone mixture by combining egg yolks, sugar, Espresso or coffee and cognac (brandy) into a large mixing bowl.
Beat with rotary beater for 2 to 3 minutes.
Add Mascarpone and continue to beat for another 3 to 5 minutes, until consistency is smooth.
Set aside.
