Baby Vidalia Sweet Onion Casserole - cooking recipe

Ingredients
    1 1/2 lb. zucchini
    4 baby Vidalia sweet onions
    2 c. crushed saltine crackers
    6 mushrooms, sliced
    1 egg, beaten
    2 Tbsp. butter
    1/4 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. oregano
    1/2 c. grated Cheddar cheese
Preparation
    Wash and cut zucchini and onions into 1/4-inch slices.
    Place in medium sized saucepan.
    Add water to cover and bring to a boil over medium-high heat.
    Boil until tender; drain.
    Combine remaining ingredients except cheese.
    Add to zucchini-onion mixture; mix until well blended.
    Pour into a greased 8-inch casserole.
    Top with cheese.
    Bake at 350\u00b0 for 30 minutes or until hot and bubbly.
