Sweet Potato Casserole - cooking recipe
Ingredients

6 medium sweet potatoes or yams, boiled in skins
1 egg, beaten
1/4 c. half and half
5 Tbsp. brown sugar
1 tsp. salt
1/3 c. Cointreau (orange flavored liqueur) or orange juice may be substituted
Preparation

Peel, mash and whip sweet potatoes until smooth.
You should have 3 cups potatoes after mashing.
Add beaten egg, half and half, sugar, salt and Cointreau.
Beat until light and fluffy. Put in buttered 1 1/2 quart casserole.
Drizzle with 1 tablespoon melted butter.
Bake at 375\u00b0 for 30 minutes or until lightly browned.
Makes 6 servings.
