Squash Casserole - cooking recipe

Ingredients
    2 lb. yellow squash, sliced
    salt and pepper to taste
    1 can cream of chicken soup, undiluted
    1 (2 oz.) jar diced pimentos, drained
    2 carrots, grated
    1 small onion, chopped
    1 (8 oz.) container sour cream
    1/4 c. butter or margarine, melted
    1 pkg. herb seasoned stuffing mix
Preparation
    Cook squash in small amount of boiling water until tender; drain well and mash.
    Add salt and pepper.
    Combine soup, pimentos, carrots, onion, sour cream and butter, blending well.
    Add squash and mix thoroughly.
    Line a greased casserole dish with half the stuffing mix.
    Spoon squash mix over the stuffing.
    Cover with remaining stuffing.
    Bake at 350\u00b0 for 40 minutes or until bubbly.
