Zucchini-Mozzarella Casserole(An Italian-Flavored Delight) - cooking recipe

Ingredients
    1 Tbsp. plus 1 tsp. margarine
    4 c. thinly sliced zucchini (unpeeled)
    1/2 c. chopped onion
    2 Tbsp. dried parsley flakes
    1/8 tsp. garlic powder
    1/2 tsp. dried oregano
    1/4 tsp. dried basil
    salt and pepper to taste
    2 eggs, slightly beaten
    6 oz. Mozzarella cheese, shredded
    1 tsp. Dijon mustard
Preparation
    Melt margarine in a large, nonstick skillet over medium heat. Add zucchini and onion; cook 10 minutes, stirring frequently, until vegetables are tender-crisp.
    Remove from heat.
    Preheat oven to 350\u00b0.
    Stir the parsley, garlic powder, oregano, basil, salt and pepper into zucchini.
