Cheddar 'N Turkey Potato Pie - cooking recipe

Ingredients
    8 oz. mushrooms, sliced (optional)
    1/4 c. chopped onion
    3 Tbsp. Parkay margarine
    1/4 c. flour
    1/4 tsp. each: tarragon and pepper
    1 c. chicken broth
    1/2 c. milk
    2 c. chopped turkey *
    1 (10 1/2 oz.) pkg. mixed vegetables
    2 c. (8 oz.) shredded Cheddar cheese
    2 c. hot mashed potatoes
    paprika
Preparation
    Cook and stir mushrooms and onion in margarine over medium-high heat for 3 minutes.
    Stir in flour, tarragon and pepper.
    Gradually stir in broth and milk; cook, stirring frequently until mixture thickens and comes to a boil, about 5 minutes.
    Reduce heat to low; stir in turkey, mixed vegetables and 1 cup of cheese.
    Simmer for 5 minutes.
    Stir 3/4 cup of cheese into hot mashed potatoes.
    Spoon turkey mixture into 1 1/2-quart casserole.
    Top with potato mixture.
    Place under heated broiler for 5 minutes.
    Sprinkle with remaining cheese and paprika.
    Place under broiler for 2 minutes.
    Makes 6 servings.
