Sweet And Sour Potato Salad - cooking recipe

Ingredients
    8 potatoes
    1/2 c. chopped ripe olives
    1 stalk celery, chopped
    2 hard-cooked eggs, sliced
    1 onion, minced
    3 sweet-sour pickles, chopped
    1 Tbsp. minced parsley
    4 slices bacon, chopped
    2 eggs, well beaten
    1 c. sugar
    1 tsp. prepared mustard
    1/2 tsp. salt
    1/4 tsp. cracked pepper
    1/2 c. vinegar, diluted with 1/2 c. cold water
Preparation
    Boil potatoes in their jackets.
    When tender, peel and slice. Add olives, celery, hard-cooked eggs, onion, pickle and parsley. Fry bacon until crisp and brown.
    Beat eggs; add sugar, spices and diluted vinegar.
    Mix well.
    Pour egg mixture into hot bacon fat; cook, stirring constantly, until thickened.
    Pour over potato mixture and mix lightly.
    Serve hot.
    Makes 6 servings.
