Grandma'S Salmon And Rice - cooking recipe

Ingredients
    1 can salmon, deboned
    2 eggs, beaten
    2 Tbsp. bacon drippings
    1 medium onion, chopped
    salt and pepper
    2 cups cooked rice
Preparation
    Heat skillet on med-high heat until hot. Add bacon drippings and eggs. Mix well. Add salmon. Mix and separate salmon well. Add onion. Salt and pepper to taste. Turn heat down to med-low and simmer for about 15 minutes, stirring frequently to prevent scorching. Serve with, or over rice.
