Ingredients

1/2 c. uncooked rice
1 c. water
1/2 c. chopped raisins
2 1/2 c. skim milk
1/4 tsp. nutmeg
Egg Beaters (equal to 3 eggs)
1/2 c. sugar or 1/4 c. sweetener
2 tsp. vanilla
1/4 tsp. salt
Preparation

In large saucepan, bring to boil the rice and water.
Stir, cover and simmer until rice is tender and liquid is absorbed, about 14 minutes.
Turn into a round 1 1/2-quart casserole, sprayed with nonstick spray.
Stir in raisins; set aside.
