Salmon Patties - cooking recipe

Ingredients
    2 large eggs
    1 can (15 oz.) red sockeye salmon, drained and flaked
    2/3 c. fine dry bread crumbs
    1/2 c. finely chopped onion
    2 Tbsp. finely chopped parsley leaves
    1/4 tsp. salt
    pepper to taste
    1 to 2 Tbsp. lemon juice
Preparation
    In a medium bowl, beat eggs enough to blend.
    Stir in salmon, 1/3 cup bread crumbs, onion and parsley, lemon juice, salt and pepper until well mixed.
    Shape into 4 patties and coat with remaining bread crumbs.
    These handle better if you refrigerate for at least 30 minutes before frying.
