Muggsy'S Favorite Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    2 c. sugar
    1 c. oil
    2 tsp. vanilla
    2 c. peeled and shredded zucchini
    1 tsp. salt
    3/4 tsp. nutmeg
    1 1/2 tsp. cinnamon
    1/4 tsp. baking powder
    2 tsp. baking soda
    3 c. sifted flour
    1 can crushed pineapple (optional)
    1 cup chopped walnuts (optional)
    1 c. raisins or chopped dates (optional)
Preparation
    Combine eggs, oil, sugar & vanilla.
    Beat together until thickens.
    Add remaining ingredients.
    Put into a greased and floured bread tin.
    Bake at 350\u00b0 for 1 hour.
    Makes 2 loaves.
