Mexican Corn Bread - cooking recipe

Ingredients
    1 1/2 c. White Lily white self-rising corn meal
    2 eggs or 4 egg whites
    3/4 c. milk or skim
    3/4 to 1 c. grated cheese or fat-free grated product
    8 oz. cream-style corn
    2 to 5 (1 fresh) jalapeno peppers, chopped
    1 large white onion, chopped
    3/4 c. oil or canola
Preparation
    Mix all ingredients, beginning with eggs.
    Pour into a well-greased, hot iron skillet.
    Bake at 450\u00b0 for approximately 40 minutes.
    Can be doubled or made fat-free/low cholesterol.
