Spiced Watermelon Rind - cooking recipe

Ingredients
    3 lb. white portion of watermelon, cubed, peel off outside green skin and all the inside red
    5 c. sugar
    2 c. cider vinegar
    1 c. cold water
    1 Tbsp. whole cloves
    1 Tbsp. whole allspice
    1 Tbsp. stick cinnamon (2 large sticks)
    1 lemon, sliced
Preparation
    Let watermelon stand in salted water overnight.
    Add 2 tablespoons of pickling salt to 1 quart of water.
    Make sure to cover all melon cubes with this solution.
    In the morning drain. Cover with fresh water in a large pot and cook until tender. Drain.
