Beef Goulash With Vegetables - cooking recipe

Ingredients
    2 Tbsp. vegetable oil
    3 c. sliced onion
    1 green pepper, chopped
    4 tsp. sweet paprika
    2 lb. beef chuck, cut 1 1/2 to 2 inches
    2 tsp. salt
    1 (14 oz.) can tomatoes
    3 medium potatoes, cut
    3 carrots, sliced
Preparation
    Heat oil in large heavy kettle.
    Add onion and green pepper and cook, stirring often, until onion is golden.
    Add paprika, beef and salt and cook, stirring until meat loses its red color. Add tomatoes and 3/4 cup water.
    Bring to a boil, cover and simmer 1 1/2 hours.
    Add potatoes and carrots and cook until all is tender.
    Makes 6 servings.
