Sunshine Raisin Casserole - cooking recipe

Ingredients
    4 oz. butter or margarine
    1 c. chopped onions
    1 c. diced carrots
    1 c. cut string beans
    2 Tbsp. caraway seed
    1 c. diced red pepper
    1 c. diced green pepper
    1 c. zucchini
    1 c. sliced mushrooms
    2 c. cooked brown rice
    1/2 c. raisins
    1/2 c. walnuts, chopped fine
    1 Tbsp. dried dill weed
    1/4 c. tamari or soy sauce
    1 c. grated Cheddar cheese
    salt and pepper to taste
Preparation
    In a large skillet, melt margarine and saute onions, carrots, string beans and caraway seed for 5 minutes.
    Add peppers and cook 3 more minutes.
    Add zucchini and cook for 3 more minutes, stirring constantly.
    Add mushrooms and cook an additional 5 minutes, covered.
    (Drain off any liquid.)
    Add cooked rice, raisins, chopped walnuts, dillweed and tamari, salt and pepper.
    Place mixture in a buttered casserole and top with grated Cheddar cheese. Bake at 375\u00b0 for 15 minutes or until casserole is heated through and cheese is melted.
    Makes 6 servings.
