Mini Emmental And Gruyere Tartlets(Makes 24 Mini-Tarts) - cooking recipe

Ingredients
    2 oz./50 g Emmental, grated finely
    2 oz./50 g Gruyere, grated finely
    2 eggs
    1/2 pt./300 ml single cream
    pepper
    6 oz./175 g shortcrust pastry
Preparation
    Make these very small if you have little tart tins. If not, make a larger tart and cut into small squares. The cheeses melt well to make a rich tasty tart. Do not use salt as Swiss cheese has a saltiness of its own when cooked. Use the shortcrust pastry to line the tart tins. Mix the cheeses and divide between the lined tart tins. Beat the eggs, cream and pepper together. Pour a little egg mixture over the cheese so that the tart is 3/4 full. Put the tray on the floor of the roasting oven and bake for 15 to 20 minutes until the pastry is crisp and the filling is risen and golden.
