Chicken Potato Salad - cooking recipe

Ingredients
    1 c. cooked chicken, shredded
    2 c. cooked potatoes, cubed
    1/2 c. cooked carrot, cubed
    1/4 c. celery, cut in 1/4-inch pieces
    2 Tbsp. sweet relish
    1/4 c. cooked beets, diced
    1 c. mayonnaise
Preparation
    Combine all ingredients except beets together. Blend thoroughly. Fold in the beets.
    Serve cold on a bed of lettuce. Garnish with chopped eggs and parsley.
