Ingredients

15 to 20 large beets
5 large onions
6 c. vinegar
3 c. water
3 c. sugar
2 Tbsp. celery seed
4 Tbsp. mustard seed
Preparation

Cook and peel beets.
When you can stick a fork into beet easily, it is done.
After peeled, slice in 1/4-inch slices.
Set aside.
