Pasta Primavera With Three Cheeses - cooking recipe

Ingredients
    6 oz. spaghetti or linguini
    2 c. chopped red or green peppers
    2 c. sliced zucchini or squash
    2 c. sliced mushrooms
    1 tsp. butter or margarine
    1 c. part skim milk Ricotta cheese
    1/4 c. milk
    1/2 c. shredded skim milk Mozzarella cheese
    2 Tbsp. grated Parmesan cheese
    1 1/4 tsp. Italian seasoning
    1/2 tsp. salt
    1/4 tsp. ground pepper
Preparation
    Cook spaghetti according to directions.
    In a 12-inch skillet, cook peppers, squash and mushrooms in margarine for 3 to 4 minutes until almost tender.
    Drain pasta.
    Toss with vegetables in skillet.
    Transfer to heated platter, cover to keep warm.
    In medium saucepan, combine Ricotta, Mozzarella, milk, Parmesan, Italian seasoning, salt and pepper.
    Cook over medium heat until warm (do not boil).
    Spoon over pasta and vegetables.
