Potato Croquettes - cooking recipe

Ingredients
    2 c. mashed potatoes
    1 egg
    1 tsp. salt
    1/4 tsp. black pepper
    2 Tbsp. chopped parsley
    1 Tbsp. Parmesan cheese
    1 clove garlic, minced (optional)
    3/4 c. bread crumbs
    1 egg, beaten
    1 Tbsp. water
    1 lb. baking potatoes (about 2 or 3 medium size)
    1/2 Tbsp. corn oil
    2 to 3 tsp. onion powder, garlic powder, chili powder or paprika
Preparation
    Preheat the oven to 450\u00b0.
    Peel the potatoes and cut into 1/4 x 1/4 x 3-inch strips.
    Pour the oil into a wide 1 or 2-quart bowl. Toss the potato strips in the oil.
    Shake off any excess oil, then place the strips on an ungreased baking pan.
    Sprinkle them with onion powder or one of the other seasonings.
    Bake for 20 minutes or until one side of the potato strips are brown.
    Turn them over and bake until brown and crisp on the other side, about 10 more minutes.
    Drain on absorbent paper towels.
    Yield:
    makes 50 to 60 fries and serves 6.
