Low-Fat Stuffed Manicotti - cooking recipe
Ingredients

12 manicotti shells, cooked and drained
1 pkg. frozen, chopped spinach, cooked and drained
1 Tbsp. chopped onions
1/4 tsp. ground nutmeg
2 tsp. chopped parsley
1 c. low-fat cottage cheese, drained
2 Tbsp. skim milk
1 egg white, beaten
2 c. tomato sauce
1/4 c. tomato paste
1/2 c. chopped red bell pepper
3/4 tsp. each dried oregano and dried basil
2 Tbsp. grated Parmesan cheese
Preparation

Mix spinach with onions, nutmeg and parsley.
Mash cottage cheese and blend with milk.
Add to spinach mixture.
Mix in beaten egg white.
Stuff shells with mixture.
