Pumpkin Ketchup(A Trinidad Special) - cooking recipe

Ingredients
    3 lb. pumpkin
    2 onions, sliced
    1/2 c. water
    2 tsp. mustard
    1 c. sugar
    1 c. vinegar
    2 tsp. salt
    2 shakes black pepper
    1 shake celery seasoning
    few drops red food coloring
    enough cornstarch to thick
Preparation
    Peel, wash and cut pumpkin in chunks.
    In 1/2 cup of water boil pumpkin and onions until soft.
    Cool a bit and blend until soft and smooth.
    Return to heat; add sugar, celery seasoning and all spices.
    Add mustard, salt and food coloring.
    Lower heat and simmer for 10 minutes.
    Add vinegar and cook for another 5 minutes.
    Add cornstarch to thicken mixture and now pour at once into sterile jars.
    Leave one inch headroom for fermentation.
