Hearty Minestrone - cooking recipe

Ingredients
    3 carrots, cut up
    3 stalks celery, cut up
    2 medium onions, cut up
    2 potatoes, cut up
    1 small zucchini, cut up
    1/4 c. string beans, cut up
    1 c. raw cabbage or spinach, cut up
    2 cloves garlic, cut up
    1/3 c. olive oil
    3 Tbsp. margarine
    4 c. beef broth
    2 1/2 c. water
    1 large can white or red beans
    1 can plum tomatoes (28 oz. size)
    1/2 tsp. basil
    1/4 tsp. rosemary
    1 bay leaf
    salt and pepper to taste
Preparation
    In large
    soup
    pot
    saute onions and garlic in oil and margarine.
    Stir
    in
    carrots, potatoes and celery.
    Add green beans, zucchini
    and
    cabbage.
    Cook
    until
    onions turn soft. Add broth, water
    and tomatoes (that you cut up) with juice to pot. Stir
    in seasonings.
    Simmer uncovered for 2 hours.
    Add beans and cook 30 minutes longer.
    If small pasta is desired, add to soup at last 20 minutes and cook until tender.
