Shrimp Scampi - cooking recipe

Ingredients
    2 lb. any size shrimp (unshelled)
    1/2 c. butter or margarine
    1 c. salad or olive oil
    1/4 c. parsley
    6 cloves garlic, crushed
    1 tsp. salt
    dash of cayenne pepper
    1/4 c. lemon juice
Preparation
    Rinse shrimp; remove shells, leaving tails on.
    Devein.
    Wash under cold running water.
    Drain and pat dry.
    Melt butter or margarine in a shallow baking pan.
    Add salad oil, 2 tablespoons parsley, garlic, salt, cayenne and lemon juice.
    Mix well.
    Add shrimp, tossing or stirring lightly in butter mixture to coat well.
    Arrange in a single layer in the pan.
    Broil 4 to 5 inches from heat 5 minutes.
    Turn shrimp.
    Broil 5 to 10 minutes longer or until red and lightly browned.
    Serve shrimp with remaining chopped parsley sprinkled over the mixture.
    Serves 8.
