Scalloped Eggplant - cooking recipe

Ingredients
    1 large eggplant, diced
    1/2 c. chopped onion
    3/4 c. croutons or dressing cubes
    1 can cream of mushroom soup
    1/3 c. milk
    1 egg, slightly beaten
    grated American cheese
Preparation
    Cook eggplant in boiling water 6 to 7 minutes.
    Drain.
    Put eggplant, onion and croutons in baking dish.
    Mix soup, milk and egg; pour over eggplant.
    Sprinkle cheese on top.
    Bake 20 to 25 minutes at 350\u00b0.
    Makes 8 servings.
