Etouffee - cooking recipe
Ingredients

1 qt. shrimp, crawfish, chicken
1 to 2 blocks butter
1 medium onion, chopped fine
1/2 c. chopped celery, fine (optional)
1 tsp. minced garlic
3 to 4 green onions, chopped fine
2 Tbsp. flour (all-purpose)
1/2 can Ro-Tel (mild)
1/2 can whole tomatoes (optional)
2 tsp. salt
1/4 tsp. cayenne pepper
Tony's (if needed)
1 tsp. Worcestershire)
Preparation

Saut onions, celery and green onions in butter until clear. Add garlic and cook a few minutes more. Stir in flour until deep brown color is made. Add tomatoes and simmer for 20 minutes. Add seasoning and cook slowly for 25 minutes more (low heat). Add seafood or chicken and cook until done.
