Spinach Quiche - cooking recipe

Ingredients
    6 c. chopped fresh spinach
    1/2 c. butter
    4 Tbsp. flour
    4 eggs, beaten
    2 c. heavy cream
    1 tsp. salt
    1/8 tsp. pepper
    1 c. grated Swiss cheese
    2 (9-inch) pie crusts
Preparation
    Saute spinach in butter until limp.
    Stir in flour and cook 5 minutes.
    Remove from heat.
    Combine eggs, cream, salt and pepper and mix well.
    Stir in cheese and spinach.
    Pour into pastry shells and bake at 375\u00b0 for 30 to 35 minutes.
