Candy Apple Pie - cooking recipe
Ingredients

1 3/4 c. unsweetened apple juice, divided
1/3 c. cinnamon candies
1/4 tsp. red food coloring
1/2 tsp. vanilla extract
4 Granny Smith or other tart cooking apples, cored and sliced
3 Tbsp. cornstarch
1 purchased 9-inch graham cracker pie crust
1 1/2 c. frozen whipped topping, thawed
1/2 ground cinnamon
1 Tbsp. lemon juice
2 Tbsp. butter or margarine
Preparation

In a large saucepan, combine 1 1/2 cups apple juice, candies, food coloring, vanilla extract, lemon juice and apples.
Bring to a boil, then simmer just until apples are tender, about 10 to 15 minutes, stirring frequently.
Combine remaining 1/4 cup juice and cornstarch.
Stir into apple mixture and continue to cook until thickened, about 2 minutes.
Then cook for another 2 to 3 minutes; add butter.
Remove from heat; cool to room temperature.
Spread apple filling over bottom of pie crust.
Chill for several hours or until holds its shape.
Before serving, combine whipped topping and cinnamon.
Top each slice with a dollop of the mixture. Yield:
6 to 8 servings.
