Martha'S Company Casserole(Low-Fat Version) - cooking recipe

4 c. noodles (6 oz.)
1 lb. lean ground beef
2 (8 oz.) cans tomato sauce
1 (8 oz.) pkg. soft low-fat cream cheese
1/4 c. low-fat sour cream
1 Tbsp. minced green pepper
1 c. low-fat cottage cheese (8 oz.)
1/3 c. chopped scallions
1 Tbsp. melted margarine (optional)
Preparation

Early in the day, cook noodles as package directs; drain. Saute beef until browned (using a little margarine, if necessary). Remove from heat; add tomato sauce.
Combine cheeses, sour cream, scallions and green pepper.
Spread 1/2 of cooked noodles in 2-quart casserole.
Cover with cheese mixture.
Top with remaining noodles.
Pour melted margarine over noodles (optional), then tomato-meat sauce.
Refrigerate at least 3 hours.
