Marinated Tomatoes - cooking recipe
Ingredients

3 large fresh tomatoes, sliced thick
1/3 c. olive oil
1/4 c. red wine vinegar
1 tsp. salt
1/4 tsp. pepper
1/2 clove garlic, minced
2 Tbsp. chopped onion
1 Tbsp. fresh chopped parsley
1 Tbsp. fresh chopped basil or 1 tsp. dried basil
Preparation

Arrange tomatoes in a large, shallow dish.
Combine remaining ingredients in a jar; cover and shake well.
Pour over tomato slices.
Cover and refrigerate for several hours.
Serves 8.
