Famous Fried Fish - cooking recipe

Ingredients
    buttermilk
    3 lb. fish
    1 slice lemon
    flour
    2 c. pancake mix
    2 1/2 c. club soda
    1 1/2 pt. oil
Preparation
    Soak fish covered with buttermilk with lemon slice in refrigerator in covered container for 2 hours (to remove fishy taste).
    Drain milk from fish; cut fillets into triangle.
    Roll in plain flour.
    Let dry on toweling.
    Combine pancake mix (dry) with club soda.
    Mix to consistency of buttermilk; dip floured fillets in mix.
    Fry in hot oil 4 minutes each side.
    Drain on toweling. Arrange 1 layer on cookie sheet.
    Keep warm in 250\u00b0 oven until all pieces have been fried.
