Cauliflower-Vegetable Casserole - cooking recipe

Ingredients
    1 large head cauliflower
    1 c. sliced fresh mushrooms
    1 c. sliced carrots or peas
    1/4 c. diced green pepper
    1/4 c. diced sweet red pepper
    1/4 c. melted margarine
    1/4 c. flour
    2 c. milk
    1 tsp. salt
    1 c. shredded Swiss cheese (optional)
Preparation
    Wash cauliflower and break into flowerets.
    Place all vegetables in a 2-quart covered casserole.
    Melt the margarine in saucepan.
    Add flour and stir.
    Add the milk and cook until thickened. Remove from heat and add cheese and stir until melted. Pour over the vegetables. Cover and bake at 325\u00b0 for about 45 minutes.
    Serves 6 to 8.
