Chicken Jambalaya - cooking recipe
Ingredients

1/4 c. shortening
8 chicken pieces (salt and pepper)
1 chopped green pepper
1 minced garlic clove
2 c. uncooked rice
2 tsp. salt
1 Tbsp. Worcestershire
3/4 tsp. thyme
1/4 tsp. Tabasco sauce
1.15 oz. tomato sauce
3 1/2 c. chicken broth
Preparation

Melt shortening in big skillet or Dutch oven.
Brown seasoned chicken and remove.
Cook pepper, onion, garlic and rice in meat drippings for 5 minutes, stirring often.
Add seasoning, tomato sauce and broth.
Arrange chicken parts in mix.
Bring to boil and simmer tightly covered 35 to 40 minutes until rice is fluffy and chicken is tender.
Makes 8 servings.
