Carrot Cake - cooking recipe
Ingredients

1-1/2 c. oil
1-3/4 c. sugar
3 eggs
2 c. flour
2 tsp. baking soda
1 tsp. salt
2-1/2 tsp. cinnamon
1-1/2 tsp. vanilla
2 c. carrots, grated
1 c. walnuts
1/2 c. coconut
1 c. crushed pineapple, drained
Preparation

Beat together oil, sugar and eggs, mixing well.
In a separate bowl, sift together flour, soda, salt and cinnamon.
Beat together with sugar mixture.
Stir in vanilla mixing well.
Add carrots, nuts, coconut and pineapple.
Pour into well greased and floured 10 inch Bundt cake pan.
Bake at 350 degrees for 1 hour. Cover with cream cheese frosting.
