Chicken Casserole - cooking recipe

Ingredients
    4 to 5 lb. chicken
    1 large onion, quartered
    1 1/2 tsp. salt
    1/2 c. butter or margarine
    1/2 c. flour
    2 (4 oz.) cans mushrooms, drained and reserve liquid
    1 c. evaporated milk
    1 tsp. salt
    1/8 tsp. pepper
    1/2 tsp. ground turmeric
    1/2 tsp. oregano leaves
    3 c. cooked rice
    1/2 c. chopped green onion
    1/2 c. grated cheese
Preparation
    Cook chicken in water to cover with onion until tender with salt added. Cool chicken (save broth). Remove bones and skin (discard). Cut chicken into small pieces. Melt butter in saucepan. Stir in flour. Add 4 cups liquid (juice from mushrooms and broth) and evaporated milk. Cook and stir until sauce is thick and smooth. Add 1 teaspoon salt, pepper, turmeric and oregano. Spread rice in bottom of pan; top with chicken, onions, sauce and mushrooms. Sprinkle cheese on top. Bake at 350\u00b0 for 30 minutes.
