Lemon Fish Roll-Ups - cooking recipe

Ingredients
    8 fish fillets (about 2 lb.)
    1 1/2 c. cooked rice
    1 c. shredded sharp Cheddar cheese
    1 (10 oz.) pkg. frozen, chopped broccoli, thawed
    1/3 c. butter
    1/3 c. lemon
    2 tsp. salt
    1/4 tsp. pepper
Preparation
    In small saucepan, melt 1/3 cup butter.
    Add 1/3 cup lemon, 2 teaspoons salt and 1/4 teaspoon pepper.
    In medium bowl, combine 1 1/3 cups rice, 1 cup cheese, 1 package broccoli and 1/4 cup lemon mixture.
    Divide among 8 fillets; roll-up and place seam-side down in 11 x 7-inch baking dish.
    Top with remaining sauce.
    Bake at 375\u00b0 for 25 minutes or until fish flakes with fork.
