Chicken Mediterranean - cooking recipe

Ingredients
    6 oz. boneless chicken breast
    2 Tbsp. olive oil
    2 Tbsp. balsamic vinegar
    1 c. julienne cut vegetables
    1 tsp. oregano, rosemary, thyme and sage mixed
    1 Tbsp. butter (optional)
    1 tsp. chopped shallots
Preparation
    Cut chicken into 3 to 4 pieces.
    Heat oil over medium heat and place meat in pan, turning after a few minutes.
    Add vinegar, shallots, herbs and vegetables.
    Cover and simmer for 7 minutes, stirring occasionally.
    Stir in butter and serve.
