White Chili - cooking recipe

Ingredients
    2 (16 oz.) cans Great Northern beans
    2 medium onions, chopped
    1 Tbsp. olive oil
    4 cloves garlic, minced
    2 (4 oz.) cans chopped green chilies, drained
    2 tsp. ground cumin
    1 1/2 tsp. dried oregano, crumbled
    1/4 tsp. cayenne pepper
    6 c. chicken stock
    3 c. chopped cooked chicken breasts
    3 c. shredded Monterey Jack cheese
    salt and pepper to taste
Preparation
    Saute onion in oil in large kettle until tender.
    Add garlic, chilies, cumin, oregano and cayenne pepper. Saute for 2 minutes, stirring frequently. Add beans and chicken stock. Bring to a boil; reduce heat. Add chicken, 1 cup cheese, salt and black pepper to taste. Simmer until cheese is melted, stirring occasionally. Ladle into soup bowls.
    Top with remaining cheese and sour cream, if desired. Yield: 8 to 10 servings.
