Lemon Chicken - cooking recipe

Ingredients
    1/3 c. lemon juice
    1/4 c. reduced-sodium soy sauce
    1 clove garlic, minced
    1/2 tsp. salt
    1/2 c. ground ginger
    1/4 tsp. pepper
    2 lb. skinned, boned chicken breast halves
    vegetable cooking spray
Preparation
    Combine first 6 ingredients in a shallow container, stirring until well combined.
    Add chicken; cover and marinate in refrigerator 2 to 3 hours, turning once.
    Drain and discard marinade.
    Transfer chicken to rack of a shallow roasting pan, coated with cooking spray.
    Bake at 325\u00b0 for 1 hour or until chicken is done.
    Cut into 2 ounce slices.
    Yields 14 servings at 1 slice each.
