Heart Healthy Pineapple Cheesecake Squares - cooking recipe

Ingredients
    1 (20 oz.) can crushed pineapple, drain and reserve juice
    unsweetened orange juice
    1/4 c. sugar
    1/4 c. flour
Preparation
    Set aside 2/3 cup of the pineapple juice.
    Add remaining pineapple juice to unsweetened
    orange juice to equal 1 cup.
    In medium saucepan, combine the sugar, flour and pineapple/orange juice. Bring mixture to a boil, then stir for 1 minute or until mixture reaches pudding consistency.
    Remove from heat, then fold in drained, crushed pineapple.
