Super Spanish Rice - cooking recipe

Ingredients
    2 Tbsp butter or margarine
    1 lb. ground beef
    1 cup celery, chopped (use some leaves)
    1 large onion chopped
    1 medium green pepper diced
    1 large clove of garlic or 1 tsp garlic powder
    1 tsp salt
    1/4 tsp pepper
    dash of cayenne pepper or tabasco
    1 cup of rice
    1 (Number 2 1/2) can (3 1/2 cups) tomatoes chopped
    1 tsp sugar
    1/2 lb. sharp cheddar cheese, grated
    green or red bell pepper for garnish (optional)
    black and/or green stuffed olives (optional)
Preparation
    Melt the butter or margarine in a large skillet. Saute the ground beef until lightly browned and the vegetables are soft. Stir in the rice, tomatoes and sugar. When the mixture simmers, stir in the cheese, reserving a little to garnish the top. Pour into a large casserole and
    bake uncovered
    for one hour using long grain or brown rice, or 1/2 hour when using minute rice. Garnish with black and/or green stuffed olives and bell pepper strips if desired.
