Scaloppine Di Vitello Al Prosciatto (Veal And Ham Cutlets) - cooking recipe

Ingredients
    6 very thin veal cutlets
    1 1/4 tsp. salt
    3/4 tsp. ground pepper
    4 Tbsp. butter
    6 slices Prosciutto or cooked ham
    1 c. sliced, sauteed mushrooms
    2 Tbsp. minced parsley
    1 1/2 c. cooked green peas
    3/4 c. dry white wine
Preparation
    Pound veal very thin.
    Season with salt and pepper.
    Melt butter in a skillet.
    Brown veal on both sides.
    Place a slice of ham on each cutlet; add the mushrooms, peas and wine.
    Cook over a low heat for 10 minutes.
    Sprinkle with parsley.
    Serves 4 to 6.
