Microwave Potato Chips - cooking recipe

Ingredients
    1 lb. red potatoes (unpeeled), scrubbed
    1 1/2 tsp. olive oil
    1/2 tsp. salt
Preparation
    Slice potatoes into thin (1/16-inch) rounds.
    Place slices in a large bowl and cover with cold water.
    Let soak for 30 minutes. Drain potatoes and dry thoroughly on paper towels. In a medium bowl, combine potatoes, oil and salt; toss to coat evenly. Lightly oil a microwave-proof plate or coat it with nonstick spray.
    Arrange some of the potatoes in a single layer on the plate.
    Microwave, uncovered, on High for 3 to 4 minutes or until the potatoes start to become crisp.
    Check frequently and rearrange slices as needed to prevent scorching.
    Transfer chips to another plate and allow to cool completely.
    (They will crisp up even more as they cool.)
    Meanwhile, repeat the process with remaining potato slices.
