Potato Refrigerator Rolls - cooking recipe

Ingredients
    1 cake yeast
    1 1/2 c. lukewarm water
    2/3 c. shortening
    2/3 c. sugar
    1 1/2 tsp. salt
    1 c. cooked, unsalted, mashed potatoes
    2 eggs or 4 yolks plus 2 tsp. water
    about 7 c. flour
Preparation
    Dissolve yeast and 1 teaspoon of the sugar in 1/2 cup of the water.
    Beat eggs, shortening, salt, rest of the sugar and the rest of the water.
    Add yeast and water mixture.
    Add flour after beating in the cup of potatoes.
    Knead in all of the flour.
    Let rise until double.
    Make into rolls or loaves.
    Let rise.
    Bake at 425\u00b0 for 20 to 25 minutes.
    You may keep dough in refrigerator several days.
