Ingredients

6 medium tomatoes peeled and quartered
1 medium onion sliced
1 medium bell pepper cut in strips
1 large cucumber peeled and sliced
3/4 c. cider vinegar
1/4 c. water
1 1/2 Tbsp. sugar
1 1/2 tsp. each celery and mustard seed
1/2 tsp. salt
1/2 tsp. red peppers
1/8 tsp black pepper
Preparation

Combine all vegetables in a large bowl and set aside. Combine remaining ingredients in small saucepan and bring to a boil for 1 minute. Pour mixture over vegetables. Cover and chill for 8 hours. Makes 10 servings.
