Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant
    1 medium onion
    salt and pepper to taste
    1 egg
    1/2 c. milk
    1 can cream of mushroom soup
    1 green pepper
Preparation
    Dice eggplant.
    Saute with onion and pepper.
    Lightly beat egg in casserole.
    Add eggplant mixture, mushroom soup and milk. Sprinkle cheese over top and bake at 350\u00b0 until done.
